Ajiaco is a Colombian potato soup with distinct regional recipes.


Ajiaco santafereño is named after Santa Fé de Bogotá (the former name of Bogotá) capital of Colombia, where it is a cultural mainstay. It typically contains pieces of chicken, large chunks of corn on the cob, two or three kinds of native potatoes (tiny papas criollas that fall apart and thicken the soup, and give the soup its characteristic dark yellow color; the waxy sabanera and/or the soft pastusa), and guasca (Galinsoga parviflora), a weedy, aromatic herb common in all America that lends the dish part of its distinctive flavour.


The soup is typically served with table cream, capers and avocado all mixed in just before eating in the proportions each individual prefers. Ajiaco is so heavy that it is usually considered a full meal. In Colombian cuisine, this is the most representative dish of Bogotá.


 


CHEEKY FOODS AJIACO RECIPE:


 


Ingredients:


1 bag of ‘Cheeky Foods Ajiaco Mix’ 1000g


3 peeled and sliced potatoes


3 chicken breasts


2 chicken stock cubes


1 garlic clove


1 spring onion chopped very finely


½ onion chopped very finely


Cream


Capers


Fresh Avocados


Salt and Pepper to taste


 


Preparation:


• Boil 4 cups of water into a pot


• Add the chicken breast, the sliced potatoes, the chicken stock, garlic and onion.


• Add only the corn cob and the guascas pack (spices) from the ‘Cheeky Foods Ajiaco Mix’.


• Let it boil for a few minutes until the potatoes start getting soft and until the chicken is cooked. Add salt and pepper to taste


• Add the remaining content of the ‘Cheeky Foods Ajiaco Mix’ and lower the fire to medium.


• When the soup has thickened, remove the chicken and sheered into small pieces.


• Let the soup simmer for another 15 minutes until everything is tender.


• Cut the avocados in half, remove the pit and then cut them into quarters. This should only be done just before serving the Ajiaco. 


• Place the capers and cream in small dishes.


• Serve the Ajiaco in individual soup dishes, preferably made of clay.


• Make sure that every dish has corn and a sheered chicken on the top. 


• Place at the top of each dish a teaspoon of capers and a tablespoon of cream.


• Serve with rice and avocado on the side.


 


This is a very delicious plate, and the guascas (included in the pack) is a must.
